Hi there, Audrey! Was the dough proofed overnight in the fridge? It sounds like it may have risen a bit too much and collapsed which is why the dough feels sticky on the surface. We'd recommend shortening up the rise time at room temperature before the shaped loaf goes in the fridge, this should help prevent this.
