We're sorry to hear that you've been having a hard time getting your bread to brown evenly, Jake! We'd recommend placing your covered baker or Dutch oven on a baking sheet to help insulate the bottom a bit as well as putting the pot on a rack in the middle of the oven to allow for more even air-flow.
