That's a great question, Lucy! You've got the right idea. The pot (and that pot, in particular, is essentially shaped like a bowl) is pretty much taking the place of a brotform since the dough can rise right in it, so it negates the need to let it rise in one bowl-shaped vessel and then have to move it to another bowl-shaped vessel, potentially deflating the dough a bit in the process. Very handy!
