Hi Scott! You could definitely use the stew pot, no problem. And you can make larger loaves or keep them small, up to you. We'd still recommend doing scoring just before putting your loaf into the oven so that once your bread is in the oven it isn't disturbed and you don't lose any of the steam that builds up inside the Dutch oven.
