When I used two potato pots, side by side, and put one in a cold oven and used the preheated/hot pot method with the other, the loaves were quite similar. The crust might be just slightly more crispy and golden brown with the hot pot method, but only just. It sounds like the cold oven start method is the perfect approach for your bread baking.
