Thanks for a very informative article. King Arthur Flour is a great resource both for products and advice. I have baked bread in an Emile Henry Potato Pot using both cold and preheated pot method. I do find that using the cold pot for the final rise before baking is easier than having to flip the risen dough into a preheated pot. I've done both. Thanks again.
