I have just gotten up at 5 am to prepare my Almost No-Knead bread for it's second ride (after 17 hours for first rise) and I uncovered the bowl (tight plastic wrap) and had my lightly floured rolling mat ready to lightly knead the dough before putting it onto a oil- sprayed parchment and placing dough into a cold 4.5 at LeCreuset Dutch oven for the next 2 hour rise, HOWEVER, when I dumped or poured the "dough" out poured dough mass along with 1/3 to 1/5 cup of liquid, looking mostly like beer!!! I dried up as much liquid as I could, sprinkled more flour on this shapeless mass on the mat, using a Pam-sprayed counter knife to knead it. It seemed hopeless but I was determined to get it onto the prepared parchment, slashing it didnt seem to do anything as the dough had no real shape, then I transfered to the LeCreuset, covered it, and left to return to bed but couldn't sleep so I thought I'd write and see what on earth you experts might think happened. I DO HAVE A PHOTO OF THE LIQUID REMAINING IN THE INITIAL RISE BOWL, if that might offer any help - most of the liquid poured out when I dumped the blob so it doesn't show the full amount of liquid. NOTE #2: the beer was cold when I added it yesterday. Could that have been the fatal flaw? ( I saw no I destruction as to its temperature, and hubby could only find COLD BEER at Wal-Mart.)
