Hi Anshu, the only egg that's called for in this recipe is in the egg wash that's brushed on top of the hand pies (and used to seal the edges). This certainly isn't a necessary step. You can use milk or cream to brush along the edges and also on top of the pastries to help them brown. You can also skip the egg and simply use water (though the hand pie won't brown quite as much in the oven). We hope this helps and happy baking! Kye@KAF
