Hi Cathy, if you make the dough the night before you'd like to bake, keep it in the fridge and you can begin working with it practically right away. It might feel a little stiff initially, so a few minutes at room temperature to soften might help. Don't let it sit for too long though; you want the dough to be very cold for maximum puff.
