Swerve is a great substitute for granulated sugar. It's erythritol, which has no chemical taste and cooks and measures exactly like regular granulated. I have served pies made entirely with Swerve and my guests have found it just fine. One other thought: Why not use tapioca flour for the thickener? It does the job, cooks into a colorless thickener and now is readily available in stores or by mail.
