Hi, I recently purchased your baguette baking pan but I’m not sure if I’ve used it correctly. After shaping the baguettes, do I put them onto my baguette pan for a final rise? Or do I leave my shaped baguettes to proof in a couche made with cloth, then remove the risen baguettes to the baguette pan for slashing and going into the oven? I don’t want to risk deflating the dough after they’ve risen after shaping. Is it ok to let them rise in their baguette pan without using the cloth couche?
