Sure, Carol! Just be sure to clean it carefully beforehand, as the patterns in granite can often hide crumbs and other debris that would be more obvious on a plainer surface like wood. You'll also want to be sure that you're using your bench knife correctly. While steel is softer than granite, you don't want to be scraping with the corner, which might affect any sealant your countertop might have. Happy baking! Kat@KAF
