Sorry for another long post but I just wanted to let Barb, Maggie, and everyone else know the progress of today's test batch.
After I took the challah dough out if the fridge earlier today, it was sticky as could be. So, I figured I would leave it out on the counter while we were out if the house to see if letting it rise some more would help, because I didn't want to just throw it all away. We were gone for over two hours. In that time, I had called the King Arthur Baker hotline like Barb suggested (twice) and the ladies told me to cut down on the honey on my next batch, and to even just stick to the original recipe. When we got to the house, the dough had risen wonderfully. Even though it was still a bit difficult to work with, I just kept flouring the work surface until I could make some kind of braids. I added raisins to the crown challah and left the four-braid plain. The braids weren't pronounced at all on the finished product) but perhaps due to the extra rising time, these loaves were so fluffy and delicious (much better than the previous four tries) and they were just amazing. So yes, I will be following your sage advice for the future (just to be safe) and I just wanted to thank everyone for their help and for rooting for me.
