On the aftertaste of lard you mention in the post, I'd like to add this: I don't live in the US, but here I've found that store bought lard has a distinct raw pig smell that I really hate. To change that, you can try remelting the lard with 2 TB of milk and 1/4 apple, until the milk turns brown on the bottom of the pan, like when browning butter.i can guarantee you'll love it like this
