I would bet your M-in-L biscuits were a little dry and somewhat overworked. Took me a long time to quit overworking my biscuit dough. Just mix until the dough comes together. So, to duplicate hers, just make them dry and knead a little longer. Turning over in shortening works well no matter how the dough is.
