Todd, we'd suggest butter for a good rise to get a thick enough biscuit for easy cutting. When it comes to crumbliness though, the type of liquid is less important than the amount. Try adding a tablespoon or two more liquid than you usually do and see if that helps get the texture of your biscuit to where you'd like it to be. Happy baking! Kat@KAF
