I want to verify, everything I HAD read seems to explain hat a poolish is equal parts of water and flour calculated as 30% of total flour. So if that 30% is 1 c. flour then add equal= 1c water to the poolish. Should I have figured. 30% of total flour and 30% of total water? Do I have this right now?
