Hi Lee, either way will work, but if you have the couche you can certainly let them rise on the floured cloth and then transfer them to the baguette baking pan right before baking, which will make it less likely that the baguette dough will stick to the pan (which can sometimes happen with wetter doughs). The tricky part is you'll also need a transfer peel to move the baguettes to the pan. While a piece of rigid cardboard might do the trick, a transfer peel is ideal. If you allow your dough to rise in your baguette pan, be sure to grease the pan to prevent sticking. You could also try lining the pan with greased parchment paper as added insurance.
