Yes, you can make and form your baguettes then cover them lightly with plastic wrap and ferment them in the fridge overnight. Take the pan out and allow it to rest at room temperature while you preheat the oven, then bake as usual. It's still best to eat the baguettes the day they are made but prepping and shaping ahead of time can be a great way to plan ahead and break up the process. Happy baking!
