Hello,

My baguettes came out pretty flavorless with a strange underlying taste to it that I can't really describe…something along the lines of what I can imagine is vaguely reminiscent of a slightly mildewy towel? Not an entirely accurate description, but that's the best comparison I can think of. Do you know why this is the case?

I also suspect it's the same reason why my crust is quite lovely but the inside isn't very substantial…a little bit chewy perhaps? Is it because I'm not kneading it enough?
