I buy a 50 pound bag of Gold Medal Unbleached flour and I think it had 0% protein. Not sure about this. Should I not lower the amount of water instead of using the same amount for King Arthur. Using a bread machine the dough includes first rising hencecdoni imit the 45 minutes rising.
