Hi Mike: For a simple 30% whole wheat substitution, you should be fine just following the recipe as written. The dough may be a tad drier, and the rise may suffer just a bit; but it'll still be a good result. And yes, go ahead and make two fatter loaves; you may find they need to bake a bit longer.
