Good question, Jeanie! We like to use a few tablespoons of Vermont Cheese Powder to popover batter to add a burst of cheesy flavor. We opt for the cheese powder rather than shredded cheese because it keeps the batter light, and the popovers still rise high. This product isn't made in a certified gluten-free facility though, so you might want to look for other options based on your dietary needs--1/4 cup of finely grated Parmesan cheese might be another good option to explore.
