Shandy, xanthan gum is a handy ingredient to keep on hand if you do a lot of gluten-free baking (or ice cream making), so it may be worth picking some up. You'll usually find it either with gluten-free baking ingredients or in the spice aisle. There are other ingredients that can serve much the same purpose (like guar gum, psyllium husk, and ground flax or chia seed), but we only test our recipes with xanthan gum (we've found it performs the best all-around), so it would take some experimentation to figure out which works best in this application, how much to use, etc. Mollie@KAF
