Hi Deanne, you're facing quite a few challenges when it comes to baking, but we're glad to hear you're persisting! We'd like to introduce you to our Gluten-Free Measure for Measure Flour if you haven't already heard of it. It's a product that can be used to replace the regular flour in non-yeasted recipes (like cakes, cookies, brownies, quick breads, muffins, and more). (Please note that the Measure for Measure Flour does not have peanuts or tree nuts added as an ingredient, but we don't test for the presence of these allergens in the final products and therefore cannot guarantee that cross-contamination may never take place.) If Measure for Measure sounds suitable for your granddaughter, you can try using it in a recipe that's naturally egg-free and nut-free, like our Cake Pan Cake and Egg-Free Carrot Cake recipes.

Another approach to consider using is taking a recipe that's already gluten-free and only uses 1 or 2 eggs, and using an egg replacer, like our Gluten-Free Chocolate Chip Cookies. We like using golden flax meal blended with water to replace eggs. (Check out full instructions here.)
