Finally someone addressed this! My mother and now me are T2 diabetics and we’ve always cut the sugar back in our recipes. Some with success and others not so much.

I’m actually making a cake today and knew cutting the sugar back 25-50% will work just fine especially with a fruit filling so it was nice to hear that confirmation. Thanks for delving into this!
