Hi Pamela, since high-altitude baking can be tricky, especially when it comes to airy cakes like an angel food cake, I would recommend sticking to the 1 tablespoon per cup reduction in sugar, along with the adjustments in baking time and temperature and liquid/flour amounts outlined in our High-Altitude Baking Guide
