Thank you both for this experiment. Many years ago, I stopped buying commercial cakes and biscuits because they are sickly sweet.
I frequently cut the amount of sugar in recipes by >20% , biscuits, jams etc. But I thought cakes were more sensitive.
You have given me confidence to follow your lead.

BTW, can I buy your flour in the UK? UK white flours have "fortifying" additives that give me severe stomach ache.
