I made the Golden Vanilla Cake for my daughter adding sprinkles to make funfetti and I reduced the sugar by 1/4-1/2 cup. The cake was tasty. I don't know if that made the cake more dense. You commented that you did not think you would reduce sugar in a chocolate cake because of the bitterness of cocoa. I have a recipe I have used for year and I have reduced the sugar by up to 1/2 cup. The cake is light and fluffy and everyone likes it. Our family does prefer dark over milk chocolate.
