This is an excellent post. I would love to see you take this further and test both sugar reduction and different types of sugar, I.e. Can you substitute white sugar with other sugar types and get the same or similar (palatable) taste and consistency. I'm trying to move away from white sugar and reduce consumption overall but still like a piece of beautiful cake once in a while.
