I think this is a really good article. The only thing I wish you would have shown is side views not all top views. The chocolate cake is the only one that looks like something is different as more sugar is removed. Also, as a pastry chef and blogger (www.pastrieslikeapro.coom) I can tell you that a teeny bit of egg yolk in egg whites does not inhibit their ability to beat up to full height. Baking is more of a science, just not rocket science!
