Hi Evan, Graduated sifters allow for the separation of particle size. A stack of sifters can collect flakes of bran or germ, “middlings,” or even fine “patent” flour from the center of the endosperm. If someone wants a flour with only a small portion of bran removed, a coarser screen should suffice. One note, different mills employ different milling technologies—results and resulting flour may vary.
