Great post, evocative writing and great info about both fresh-milled flour and the recipe. The link to the recommended mill doesn't work now, as it seems KA doesn't sell the Nutrimill any longer. Looking at Nutrimill's website, there are three models - the Classic, the Plus Whisper Quiet, and the Harvest - which of these does KA recommend for the miche and other whole-grain recipes?
