Hi Diane, thanks for your question! In addition to milling, varieties such as Einkorn do have needs which require special handling. I would recommend that you begin your exploration with the blog recipe, milling your own wheat. Once you feel that recipe is working well and results are consistent, you might begin blending some of your einkorn, noting changes as you proceed.
