Hello Karen, Thanks for the great question. It's best to measure the weight of flour after milling as I sometimes find (depending on the mill) that some flour may remain tucked away inside the mill. So, for accuracy's sake, double-check that your yield matches your need, and proceed! Happy baking, Martin
