I'm sorry that I don't have any experience with the Vitamix. Does the flour feel smooth (similar to store bought whole wheat) or, does it feel sandy? You want it to be smooth and fine, not sandy. You might also look around on the internet or, on the Vitamix website for advice for producing fine flour?
