Great to hear that you have found success with the cast iron. It's a great way to simulate a steamy, hot bake oven at home.
I didn't add anything to the loaf for coloring-it's simply browning from the heat of the oven. If you'd like more color (and remember, color is flavor!) try increasing your bake time and/or temperature.
