I've been milling my own flour in a Nutrimill for some time now. I bake cookies and cookie-like goodies for my club. I use standard recipes and simply substitute my home-milled flour (from soft wheat) for the ap flour in the recipe. People are always telling me how good my cookies are, and I strongly suspect that the fact that I'm using home-milled flour is a big factor.
