Nice article....I bake all our breads, trying something new all the time. I bake loaves in a cast iron pot a fair amount of time. I score the Ioaves making them look interesting. My question is what makes Martin's loaf around the scoring a darker color. I love the affect. Did he paint carmel color around the scoring?
