Thank you Martin for this terrific post. Growing up, my mom milled her own flour whenever she baked bread. At the time I didn't realize how blessed we were to have wonderful homemade breads; I always wanted the white bread I saw on TV! My mom isn't able to bake much anymore, but your post has inspired me to spend time talking with her about her milling techniques and the secrets of her delicious loaves...and give it a try myself.
