Doubling by volume is not the same as doubling by mass. Here, the flour packs down differently and your measuring spoons, from one to the next, may not be perfectly calibrated. As an experiment, I suggest doubling based on mass (all ingredients). See if the scale up results come out more similar to prove this hypothesis.
