Thank you for writing and posting this wonderful article! I have preached against over mixing pancakes for years! Everyone thinks pancakes are easy, which I believe is part of the problem. Some young cooks believe that if they can make brownies, which they believe to be more complex than pancakes, pancakes should be a breeze. Not so, unless one wants pancakes with the same texture as a brownie! Fewer ingredients does not mean a recipe or method is simple, it simply means one must use more finesse and skill with that simple recipe, or face failure.
