Hi Meg! Coconut flavor is usually fairly strong so we'd suggest starting with just 1/4 teaspoon in addition to the vanilla. Vanilla enhances everything. As for the powder, you can start by adding 1/4 cup in place of 1/4 cup of the flour. If you find that the dough is unbearably sticky while you're patting and cutting out scones, you can sprinkle some extra flour on your counter to help them from sticking and keep the flour as-is next time.
