I baked a 5-egg braided Challah using the thump method (on top) and the egg-wash was a rich brown at 30 mintues at 325. I used All-Purpose flour. Very dissapointed after cooling and first slice revealed the bread only half done. Most recipes do not mention testing with a thermometer.
