Does testing the temp with a thermometer affect the freshness or crumb of the bread at all? I was just thinking even though it is a small hole the thermometer is making in the bread, that wouldn't that break the seal of freshness the crust provides? Would it let too much air in and lead to an gummy crumb like if you were to cut open the loaf before it totally cools?
