Cat, thanks for reaching out with your question! Most quick breads (like zucchini bread) as well as fruitcake are done at 200°F, while banana bread is ready at 205°. Pan shape shouldn't matter, provided that you're getting an accurate reading from the center of the bread, which should be the coolest part of the loaf. Happy baking! Kat2KAF
