Frustrating indeed, Marion. Sourdough is often in a similar category as rye bread, being very moist, and needing to be baked to 205°F-210°F, which is closer to the temperatures you've been baking to. Once you've found the perfect temperatures for the types of loaves you make in your environment, stick with it! Annabelle@KAF
