Hi Patricia, Use the thermometer to take the temperature of your baked good at the very end of the baking process, when you think it has finished baking. The kind of thermometers we recommend using shouldn't be left in the oven while the bread/cake bakes, but can be used to test when the bake time nears completion. We hope that helps! Kye@KAF
