Hi Dee! We don't have a recipe for drop biscuits designed to use almond flour, but you use substitute almond flour for up to 25% of the flour (per this article) in our Scones and Biscuits recipe, or if you want to make it grain-free, you could use our Paleo Baking Flour for 100% of the flour in it since it replace all-purpose flour in non-yeasted recipes. We have tested baked goods using erythritol and other sugar replacers and have found that they create very hard, crumbly baked goods that don't brown and have bitter aftertastes. So so far, we've had no results that meet our standards. Our team is always researching and learning each day so hopefully we'll be able to have more information and resouces for baking with sugar replacers in the future.
