Hi Kimberly! While you can certainly substitute 25% of the flour in your cookies with almond flour and try replacing the white sugar with coconut sugar, we would not recommend adding a stick of butter, nor replacing all of the all-purpose flour in them with almond flour. In neither case will you end up with a recipe that holds together properly. Hope that helps clarify!
